Broccoli and cheese is a delicious combination, and when you roll the two together in a puff pastry dough then even the kids will eat it up. Serve this Broccoli Cheese Roll with fish for a family dinner or as an easy dairy side dish for Shavuot.
2 17-ounce packages Puff Pastry Sheets (1 kilo roll in Israel) 28 ounces (800 grams) frozen broccoli1 cup (250 grams) cottage cheese1/2 cup grated Swiss cheese 1 egg yolk
1. Defrost dough according to package directions. 2. Preheat oven to 350°F (180°C). Line two cookie sheets with parchment paper. 3. Boil the broccoli until soft enough to mash with a fork. Drain well. Mash with a fork. 4. Stir the cheeses into the mashed broccoli. 5. Spread the dough out flat. Spread the broccoli cheese mixture evenly on top of the dough. Roll the dough up to form a roll with the broccoli-cheese mixture inside. 6. Lay the broccoli cheese rolls down on the cookie sheets, placing the seam face down. Brush the top of the roll with egg yolk. 7. Bake at 350°F (180°C) for approximately 30 minutes or until the roll is a nice golden color.
